Everyday Superfoods: Beets

Beets with their vibrant red hue, are loaded with vitamins, minerals, and fiber.

Did You Know?

  • Beets get their coloring from betalains, a type of natural plant pigment that also serves as an antioxidant.
  • Just 1 cup of beets has almost 4 grams of fiber.
  • They also contain a compound called nitrates that are converted into nitric acid in the body and can support heart health by decreasing blood pressure and increasing blood flow.
  • If you’re looking for the cardiovascular benefits of beets, make sure to eat them raw. High temperatures from cooking decreases the bioavailability of nitrates.
