Ingredients
- 2 each avocado
- ¾ tsp fresh lime juice
- ¼ tsp kosher salt
- 1/8 tsp ground black pepper
- 4 each hard-boiled eggs
- 4 slices whole grain bread
- 2 Tbsp. Micro greens
- ¼ tsp extra virgin olive oil
Pickled Red Onions
- 2 tsp granulated sugar
- ½ tsp pickling spice
- ½ tsp kosher salt
- 2 Tbsp red wine vinegar
- 1 Tbsp Red Onions sliced

Instructions
- Prepare pickled red onions according to recipe.
- Mash avocado and toss well with lime juice and season with salt and pepper.
- Slice hard boiled eggs.
Pickled Red Onions
- Place vinegar, sugar, pickling spice, and salt in a saucepan.
- Bring to a boil, then reduce to a simmer until the sugar dissolves.
- Place red onions in a container and pour hot liquid over top.
- Cover and refrigerate for 3 hours.
Assembly:
- Lightly toast bread slices.
- Spread mashed avocado evenly across toast.
- Garnish each with 1 Tbsp. pickled onions.
- Toss micro green lightly with olive oil and season with salt and pepper.
- Top toast with micro greens.
- Top with sliced egg across the length of the toast.
