2avocado
¾tspfresh lime juice
¼tspkosher salt
1/8tspground black pepper
4hard boiled egg
4sliceswhole grain bread
2Tbsp.Micro greens
¼tspextra virgin olive oil
Pickled Red Onions
2tspgranulated sugar
½tsppickling spice
½tspkosher salt
2Tbspred wine vinegar
1Tbspred onionsliced

Instructions
Prepare pickled red onions according to recipe.
Mash avocado and toss well with lime juice and season with salt and pepper.
Slice hard boiled eggs.
Pickled Red Onions
Place vinegar, sugar, pickling spice, and salt in a saucepan.
Bring to a boil, then reduce to a simmer until the sugar dissolves.
Place red onions in a container and pour hot liquid over top.
Cover and refrigerate for 3 hours.
Assembly:
Lightly toast bread slices.
Spread mashed avocado evenly across toast.
Garnish each with 1 Tbsp. pickled onions.
Toss micro green lightly with olive oil and season with salt and pepper.
Top toast with micro greens.
Top with sliced egg across the length of the toast.
