Ingredients

  • 1 1/2 cup fresh tomatoes diced
  • 1/2 cup fresh celery stalks diced
  • 1/2 cup fresh cucumbers peeled, seeded and diced
  • 1 tsp jalapeno peppers sliced
  • 1 Tbsp fresh scallions chopped
  • 2 Tbsp fresh cilantro
  • 2 Tbsp fresh parsley
  • 1/4 cup low sodium vegetable juice
  • 1/2 cup ice

Instructions

  • Place all ingredients into a blender and puree until very smooth.
