Ingredients
- 1 tsp garlic powder
- 1/2 tsp cumin, ground
- 1/4 tsp chili powder
- 1/2 tsp turmeric, ground
- 2 Tbsp warm water
- 2 lbs tofu, firm, drained, cut into 1" cubes
- 2/3 cup red onion, finely chopped
- 2/3 cup red bell peppers, finely chopped
- 8 oz kale, destemmed, chopped
- 1 tsp canola oil

Instructions
- In a mixing bowl, combine spices with warm water and set aside.
- Heat oil in a sauté pan over medium high heat. Add peppers and onions and sauté for approximately 6-8 minutes until tender. Add kale and sauté for an additional 2-3 minutes or until cooked through. Crumble tofu and add to sauté pan, cook until heated through. Stir in water/spice mixture and simmer.
