Southwest Tofu Scramble

Ingredients

  • 1 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • 1/2 tsp ground turmeric
  • 2 Tbsp water warm
  • 2 lbs firm tofu drained, cut into 1" cubes
  • 2/3 cup red onion finely chopped
  • 2/3 cup red bell peppers finely chopped
  • 8 oz kale destemmed and chopped
  • 1 tsp canola oil

Instructions

  • In a mixing bowl, combine spices with warm water and set aside.
  • Heat oil in a sauté pan over medium high heat. Add peppers and onions and sauté for approximately 6-8 minutes until tender. Add kale and sauté for an additional 2-3 minutes or until cooked through. Crumble tofu and add to sauté pan, cook until heated through. Stir in water/spice mixture and simmer.
