 Overnight Oats Rainbow Bowl

Eating a rainbow of fruits and veggies not only pleases the eye but also nourishes the body, offering a burst of flavor and essential nutrients. It’s a simple, fun way to bring more color—and health—into our daily routines! This bowl starts with overnight oats as a base then layers on a rush of color. Plus extra fiber and omega-3’s from the chia and flax seeds.

Ingredients

  • 1/2 cup whole milk
  • 1/2 cup Greek yogurt vanilla, fat free
  • 1/2 cup Old Fashioned Oats
  • 2 ea strawberries fresh
  • 1/4 cup mango chunks frozen
  • 1/4 cup blueberries fresh
  • 1 ea kiwi fruit fresh
  • 1 tsp white chia seeds
  • 1 tssp ground brown flax seed
  • 1 ea mint sprig fresh

Instructions

Overnight Oats

  • To prepare overnight oats place oats in a bowl.
  • Pour milk and yogurt over the top.
  • Fold ingredients together gently.
  • Cover and refrigerate overnight.

Fruit Instructions

  • Thaw and drain mango.
  • Wash and dry blueberries, kiwi and strawberries.
  • Peel and slice kiwi into ¼” slices.
  • Cap and slice strawberries.

To Assemble Each Bowl

  • Place 1 cup oat base in a bowl and top with: ¼ cup blueberries, 1 tsp flax seeds, 1 sliced kiwi, ¼ cup mango, 1 tsp chia seeds, and 2 sliced strawberries. Garnish with fresh mint sprig.

Chef Tips

Do not use steel cut oats.
Swap the milk and yogurt for non-dairy options in order to make this recipe vegan friendly!
