Ingredients
Crostini
- 12 slices baguette
- 2 Tbsp extra virgin olive oil
- 1/8 tsp kosher salt
- 1/8 tsp ground black pepper
Guacamole
- 2 ea. avocados
- 2 Tbsp goat cheese
- 2 oz. pomegranate seeds
- 2 oz. cucumbers
- 2 tsp fresh oregano
- 1/8 tsp kosher salt
- 1/2 ea. lemon
Garnish
- 2 Tbsp goat cheese
- 1/2 oz pomegranate seeds
Instructions
Make the crostini
- Brush baguette slices with olive oil and sprinkle with salt and pepper. Bake at 350°F for about 4-6 minutes. Cool and reserve.
Make the guacamole
- Remove skin and pit from avocado and place in mixing bowl, add goat cheese (reserve some for garnish).
- Chop oregano and add to bowl. Mash all together with a fork.
- Add pomegranate (save some for garnish), salt and juice from lemon. Mix well and taste.
Garnish
- Place guacamole on plate or bowl and sprinkle with pomegranate and goat cheese, Add crostini.
