Ingredients
Edamame Goat Cheese Spread
- 1/3 cup edamame thawed and shelled
- ¾ oz goat cheese
- ½ tsp lemon juice
- 1 tsp parsley, fresh minced
- 1 tsp tarragon, fresh minced
- 1 tsp basil, fresh minced
Burger and Toppings
- 2 tsp oil
- 2 ea burger buns
- 2 ea Actual Veggies, Super Greens Veggie Burger
- 2 ea radishes sliced thin
- ½ cup arugula
- ¼ cup red cabbage shredded
- 1 ea avocado, small sliced
- Pinch of salt

Instructions
Edamame Goat Cheese Spread
- Steam edamame, allow to cool slightly and while warm blend with goat cheese, lemon juice and herbs. Chill.
Burger and Toppings
- Slice radish and toss together with arugula and cabbage.
- Cook burger patty with oil according to package instructions.
- Toast bun.
To assemble each burger place in the following order on the bottom bun:
- 2 tbsp edamame goat cheese spread
- ½ sliced avocado with pinch of salt
- 1 ea actual veggies patty
- 1/4 cup arugula mixture
- Top bun
