Green Goddess Burger with Herbed Edamame Spread

Ingredients

Edamame Goat Cheese Spread

  • 1/3 cup edamame thawed and shelled
  • ¾ oz goat cheese
  • ½ tsp lemon juice
  • 1 tsp parsley, fresh minced
  • 1 tsp tarragon, fresh minced
  • 1 tsp basil, fresh minced

Burger and Toppings

  • 2 tsp oil
  • 2 ea burger buns
  • 2 ea Actual Veggies, Super Greens Veggie Burger
  • 2 ea radishes sliced thin
  • ½ cup arugula
  • ¼ cup red cabbage shredded
  • 1 ea avocado, small sliced
  • Pinch of salt

Instructions

Edamame Goat Cheese Spread

  • Steam edamame, allow to cool slightly and while warm blend with goat cheese, lemon juice and herbs. Chill.

Burger and Toppings

  • Slice radish and toss together with arugula and cabbage.
  • Cook burger patty with oil according to package instructions.
  • Toast bun.

To assemble each burger place in the following order on the bottom bun:

  • 2 tbsp edamame goat cheese spread
  • ½ sliced avocado with pinch of salt
  • 1 ea actual veggies patty
  • 1/4 cup arugula mixture
  • Top bun
