Ingredients
- 2 cups watermelon fresh, cubed
 - 1/8 cup red onion sliced
 - 1/8 cup fresh mint chopped
 - 1 ea avocados fresh, diced
 - 1/4 cup fresh lemon juice
 - 1/2 tsp honey
 - 1/2 Tbsp extra virgin olive oil
 - 1/8 tsp kosher salt
 - 1/8 tsp ground black pepper
 - 1/4 cup crumbled feta cheese
 
Instructions
- In a bowl combine the watermelon, red onion,mint and avocado. Stir gently to combine.
 - In a separate bowl, mix the lemon juice and honey together.
 - Then while constantly whisking, drizzle in the olive oil, a little at a time, until it's all combined.
 - Add the dressing to the salad and toss gently tocombine.
 - Top with the crumbled feta cheese.
