Blueberry, Lemon & Coconut Overnight Oats

Ingredients

Base Ingredients

  • 3/4 cuo kefir
  • 1/4 cup steel cut oats
  • 1 tsp honey
  • 2 tsp chia seeds

Blueberry, Lemon & Coconut Recipe Variation

  • 3/4 cup blueberries divided (1/2 cup and 1/4 cup)
  • 1 tsp lemon zest
  • 1 Tbsp almonds slivered
  • 1 Tbsp unsweetened shredded coconut

Instructions

  • Wash and rinse blueberries and lemons. 
  •  In a bowl, combine your base ingredients together – kefir, steel cut oats, honey, and chia seeds.
  • In a separate bowl add ½ cup blueberries and mash thoroughly.
  • Next, add mashed blueberries and almonds to oat mixture.
  • Using a grater, grate fresh lemon zest, then add to oat mixture.
  • Stir until well combined.
  •  Pour oat mixture into a Tupperware container, mason jar, or other to-go container to make this an easy grab-n-go breakfast item.  Let oats soak for at least 10 hours.
  • When ready to eat, top withremaining ¼ cup blueberries and shredded coconut flakes.  Eat and enjoy!
