Spinach and Artichoke Boursin Salad

A vibrant mix of fresh spinach, artichokes, roasted garbanzo beans, boursin cheese cubes, onion, tomatoes and finished with green goddess dressing

Ingredients

  • 6 cups Baby Spinach
  • 1 cup Artichoke Hearts chopped
  • ¼ cup Red Onion
  • 1 cup Grape Tomatoes
  • 6 oz Boursin Bites, Garlic & Herb
  • 1 cup Garbanzo Beans canned, drained
  • 1 Tbsp Avocado Oil
  • 1/8 tsp Salt
  • 1/8 tsp Ground Black Pepper
  • 1 cup Primal Kitchen Green Goddess Dressing

Instructions

  • Preheat oven to 350F degrees.
  • Toss garbanzo beans with avocado oil, salt, and pepper in a bowl.
  • Place on a sheet pan and roast in oven until dried but not too hard, about 45 minutes. Toss a few times during cooking. Remove from the oven and cool.
  • Wash and dry all produce.
  • Julienne onions and cut tomatoes in half.
  • In each serving bowl or plate, place 1.5 cup spinach, ¼ cup tomatoes, ¼ cup onions, ¼ cup artichokes, 1.5 oz cheese cubes (about 9 cubes), 1 Tbsp garbanzo beans, and drizzle 2 floz dressing.

Chef Tips

May use feta or mini mozzarella balls in place of the Boursin cheese.
