Ingredients
- 6 cups Baby Spinach
- 1 cup Artichoke Hearts chopped
- ¼ cup Red Onion
- 1 cup Grape Tomatoes
- 6 oz Boursin Bites, Garlic & Herb
- 1 cup Garbanzo Beans canned, drained
- 1 Tbsp Avocado Oil
- 1/8 tsp Salt
- 1/8 tsp Ground Black Pepper
- 1 cup Primal Kitchen Green Goddess Dressing

Instructions
- Preheat oven to 350F degrees.
- Toss garbanzo beans with avocado oil, salt, and pepper in a bowl.
- Place on a sheet pan and roast in oven until dried but not too hard, about 45 minutes. Toss a few times during cooking. Remove from the oven and cool.
- Wash and dry all produce.
- Julienne onions and cut tomatoes in half.
- In each serving bowl or plate, place 1.5 cup spinach, ¼ cup tomatoes, ¼ cup onions, ¼ cup artichokes, 1.5 oz cheese cubes (about 9 cubes), 1 Tbsp garbanzo beans, and drizzle 2 floz dressing.
Chef Tips
May use feta or mini mozzarella balls in place of the Boursin cheese.
