Ingredients
6cupsBaby Spinach
1cupArtichoke Hearts chopped
¼ cupRed Onion
1cupGrape Tomatoes
6ozBoursin Bites, Garlic & Herb
1 cupGarbanzo Beanscanned, drained
1TbspAvocado Oil
1/8tspSalt
1/8 tspGround Black Pepper
1cupPrimal Kitchen Green Goddess Dressing

Instructions
Preheat oven to 350F degrees.
Toss garbanzo beans with avocado oil, salt, and pepper in a bowl.
Place on a sheet pan and roast in oven until dried but not too hard, about 45 minutes. Toss a few times during cooking. Remove from the oven and cool.
Wash and dry all produce.
Julienne onions and cut tomatoes in half.
In each serving bowl or plate, place 1.5 cup spinach, ¼ cup tomatoes, ¼ cup onions, ¼ cup artichokes, 1.5 oz cheese cubes (about 9 cubes), 1 Tbsp garbanzo beans, and drizzle 2 floz dressing.
Notes
May use feta or mini mozzarella balls in place of the Boursin cheese.
