Ingredients

  • 1 Tbsp oil
  • 3 Tbsp fresh garlic chopped
  • 1 lb raw shrimp peeled, deveined
  • 1 cup red onion thinly sliced
  • 1/2 cup red bell peppers diced
  • 1/2 cup yellow bell peppers diced
  • 3 cup tomatoes small diced
  • 2 Tbsp tomato paste
  • 1/2 cup white wine
  • 1 Tbsp fresh lemon juice
  • 1 tsp Sriracha sauce
  • 1 Tbsp fresh oregano chopped
  • 1 Tbsp fresh parsley chopped
  • 1 Tbsp fresh basil chopped
  • 1/8 tsp ground black pepper
  • 5 cup linguini pasta cooked
  • 1 1/4 tsp fresh parsley chopped

Instructions

  • In a large skillet heat oil and garlic, cook until fragrant. Add the shrimp to the pan. Cook until shrimp appears pink and cooked through, about 2 to 4 minutes, remove from the pan. Hold warm until ready to use.
  • In the same pan, add the onions and bell peppers, and sauté until translucent, about 10 minutes. Add the diced tomatoes and tomato paste, reduce heat to simmer for 15 minutes stirring occasionally.
  • Pour in the white wine and lemon juice, then reduce by half. Next add the sriracha, oregano, parsley, basil, and pepper. Remove from heat.
  • To serve: In a mixing bowl, mix 1 cup of cooked linguini noodles with 4 ounces of sauce, and 3 ounces of shrimp. Transfer into the bottom of an entrée bowl and garnish with 1/4 tsp of fresh chopped parsley.
