Instructions
In a large skillet heat oil and garlic, cook until fragrant. Add the shrimp to the pan. Cook until shrimp appears pink and cooked through, about 2 to 4 minutes, remove from the pan. Hold warm until ready to use.
In the same pan, add the onions and bell peppers, and sauté until translucent, about 10 minutes. Add the diced tomatoes and tomato paste, reduce heat to simmer for 15 minutes stirring occasionally.
Pour in the white wine and lemon juice, then reduce by half. Next add the sriracha, oregano, parsley, basil, and pepper. Remove from heat.
To serve: In a mixing bowl, mix 1 cup of cooked linguini noodles with 4 ounces of sauce, and 3 ounces of shrimp. Transfer into the bottom of an entrée bowl and garnish with 1/4 tsp of fresh chopped parsley.
