Ingredients

  • 1 Tbsp Dijon mustard
  • 1/4 cup apple cider vinegar
  • 2 Tbsp maple syrup
  • 1/3 cup pomegranate juice
  • 1/3 cup canola oil
  • 1/8 tsp salt

Instructions

  • Combine pomegranate and maple syrup in a pot over medium heat. Reduce by 50%. Chill.
  • In a blender, combine pomegranate maple reduction, vinegar, Dijon mustard and salt. Blend until combined.
  • With blender still running, stream in canola oil slowly until dressing is emulsified.
