Peach Blueberry Almond Overnight Oats

Ingredients

  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cloves
  • 1/3 cup granola
  • 2 Tbsp dried cranberries
  • 2 Tbsp raisins
  • 1 cup vanilla coconut milk yogurt
  • 3/4 cup vanilla almond milk
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground cloves
  • 1 cup old fashioned oats
  • 3 each peaches 1 peeled and diced to for oats and 2 peeled and sliced for top of oats.
  • 1 cup blueberries
  • 1/3 cup sliced almonds toasted
  • 1/2 cup gingerbread granola

Instructions

  • Prepare granola: mix spices and combine with your favorite granola, cranberries, and raisins.
  • In a large bowl, combine coconut yogurt, almond milk, cinnamon and cloves. Fold in oats and diced peaches until well distributed. Cover and refrigerate for a minimum of 6 hours or overnight.
  • To serve, place 1/2 cup of oat mixture in the bottom of a bowl. Top with 3-4 peach slices and 1/4 cup blueberries. Garnish with 2 Tbsp granola and 2 tsp toasted almonds. Serve cold.
