Ingredients
- 5 each peaches
- 2 each cucumbers
- 1 each red onion
- 1 tsp Szechuan peppercorns
- 1/4 cup unseasoned rice wine vinegar
- 2 Tbsp honey
- 2 Tbsp orange juice
- 1.25 tsp kosher salt
- 1/4 cup scallions chopped
- 1/4 cup fresh cilantro chopped
- 3 Tbsp fresh basil chopped
- 3 Tbsp fresh Thai basil chopped
- 1/4 cup fresh mint chopped

Instructions
- Thinly slice peaches, red onion, and cucumbers.
- Crush the Szechaun peppercorns. In a bowl, mix the rice wine vinegar, honey, orange juice, salt, and crushed Szechuan peppercorns.
- In a large bowl, add peaches, onions and cucumbers. Add the dressing and toss together. Mix in scallions and fresh herbs. Serve immediately.
