Cinnamon Roasted Peaches
- 1 lb peaches, sliced, frozen or fresh
- 3 tbsp granulated sugar
- 1 1/2 tsp cinnamon
- 3 cups old fashioned oats
- 2 tbsp maple syrup
- 1/4 tsp vanilla extract
- 2 1/2 cups oat milk

- Prepare caramelized peaches by combining sugar and peaches in a pot. Cook until peaches are tender. Add cinnamon and mix well. Cool to room temperature and store in the refrigerator.
- Mix overnight oat ingredients and portion into four cups. Top with 2 ounces of previously prepared peaches. Cover and chill in refrigerator for at least an hour or overnight for best results.
