Ingredients
- 2 Tbsp warm water
- 1 Tbsp ground flax seeds
- 1/2 tsp vanilla extract
- 1/2 cup butter softened
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 each egg
- 1 1/2 cup all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 Tbsp nutritional yeast
- 1/2 cup semi-sweet chocolate chips
- 1 1/2 cup old fashioned oats

Instructions
- Pre-heat oven to 325F degrees.
- Add ground flax seed to water and allow to hydrate 10-12 minutes.
- In a mixingbowl add flax mixture, vanilla, butter, sugars and eggs and beat with a paddleuntil well mixed.
- Sift together the flour, soda, salt and yeast. Add to butter mixture and mix gently until well blended. Fold oats and chocolate chips into the dough and let rest 5 minutes.
- Scoop cookiedough (1 oz.) on to a paper lined baking sheet, place in pre-heated oven andbake for 12 minutes.
- Once fully cooked, remove from oven and allow to cool.
