Marinated Green Bean Salad

Ingredients

  • 12 oz green beans fresh
  • ¼ cup red onions thinly sliced
  • 1/3 cup Italian dressing
  • 1 cup cannellini beans low sodium, canned, drained
  • ¾ cup cherry tomatoes halved
  • 3 T sunflower seed kernels
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  • Steam whole green beans in a pot of boiling water until they are al dente, about 4-5 minutes. Place in a bowl with ice water to stop cooking, remove quickly and dry.
  • Cut onions, tomatoes and drain beans and add to a bowl with green beans, salt and dressing and toss to combine.
  • Place in service bowl and garnish with sunflower seeds and sprinkle with fresh cracked pepper.
