Ingredients
For the Lemon Basil Chicken Salad
- 12 oz grilled chicken breast shredded
- 1/4 cup mayonnaise
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1 Tbsp celery small diced
- 2 tsp fresh lemon juice
- 1 tsp ranch dressing
- 1 Tbsp fresh basil chopped
For the Basil Lemon Mayonnaise
- 2 tsp fresh basil chopped
- 1/4 tsp lemon zest
- 1 cup mayonnaise
For the Sandwich
- 4 ea croissant
- 4 ea lettuce leaf
- 8 ea tomatoes slices

Instructions
For the Lemon Basil Chicken Salad
- In a medium-sized bowl, add the shredded chicken, mayonnaise, salt, pepper, celery, lemon juice, ranch dressing, and fresh chopped basil. Stir until well blended.
For the Basil Lemon Mayonnaise
- Combine basil, lemon zest, and mayonnaise in a small mixing bowl. Stir to combine, Refrigerate until ready to use.
For the Sandwich
- Toast the croissant. Once the croissants are toasted, place them on your cutting board or work surface. Top the bottom half with 1 lettuce leaf, then 2 slices of tomato, and 3 oz. of chicken salad. Finish with the top of the croissant. Serve with 2 oz. lemon basil mayonnaise on the side.
