For the Lemon Basil Chicken Salad
In a medium-sized bowl, add the shredded chicken, mayonnaise, salt, pepper, celery, lemon juice, ranch dressing, and fresh chopped basil. Stir until well blended.
For the Basil Lemon Mayonnaise
Combine basil, lemon zest, and mayonnaise in a small mixing bowl. Stir to combine, Refrigerate until ready to use.
For the Sandwich
Toast the croissant. Once the croissants are toasted, place them on your cutting board or work surface. Top the bottom half with 1 lettuce leaf, then 2 slices of tomato, and 3 oz. of chicken salad. Finish with the top of the croissant. Serve with 2 oz. lemon basil mayonnaise on the side.
