Ingredients
- 2/3 cup brown rice dry
- 2 tsp fresh lime juice
- 1/4 cup fresh cilantro chopped
- 8 each egg
- 1 cup black beans cooked
- 1/4 cup avocado cubed
- 1/4 cup salsa
- 1/8 tsp kosher salt

Instructions
- Cook rice according to package. Fluff rice and stir in lime juice and half of the cilantro.
- Poach or fry eggs, whichever you prefer.
- Place rice and beans into a bowl, top with one egg each, avocado, salsa, salt, and remaining cilantro.
