Farro, Lime, Pineapple, and Yogurt Parfait

Ingredients

  • 4.5 oz dry farro
  • 3/4 cup tap water
  • 1/8 tsp kosher salt
  • 1/4 tsp vanilla extract
  • 2 tsp fresh lime juice
  • 3/4 tsp lime zest grated
  • 3 Tbsp 2% milk
  • 1/8 tsp ground nutmeg
  • 3/4 cup plain Greek yogurt fat free
  • 6 oz fresh pineapple diced
  • 2 tsp lime zest grated

Instructions

  • Combine farro, water and salt, steam for 25 minutes, remove from steamer and chill.
  • Combine chilled farro with vanilla extract, lime juice and zest, milk, and nutmeg.
    Using a 9 fl oz cup, layer:
    4 oz farro mixture
    3 Tbsp yogurt
    1.5 oz pineapple
    1/2 tsp lime zest
