- 1/2 cup dry farro
- 3/4 cup water
- 1/8 tsp kosher salt
- 1/4 tsp vanilla extract
- 2 tsp fresh lime juice
- 3/4 tsp lime zest
- 3 Tbsp 2% milk
- 1/8 tsp ground nutmeg
- 3/4 cup plain Greek yogurt fat free
- 3/4 cup fresh pineapple diced
- 2 tsp lime zest

- Combine farro, water and salt, and steam for 25 minutes. Set aside and chill.
- Combine chilled farro with vanilla extract, lime juice and zest, milk, and nutmeg.Layer cooked farro, yogurt, pineapple, and second listed lime zest.
