This @unidinecorporation clinical team has worked diligently with their executive chef to ensure that specialized-patient populations’ diet requirements and preferences are met. They navigate a large kosher patient population, along with those who are on modified textured dysphagia diets. The dietitians meet with patients to understand their needs, collaborating with the chef to ensure these recipes can be executed in their kitchen or sourced from outside Kosher facilities. The team is working on rebuilding a new kosher menu to ensure that there is something enjoyable for everyone while promoting health and diet compliance. Together, the team at Shelbyville Central Schools is teaching high school students the importance of growing their own food. After securing a grant for two hydroponic gardens, Chef Mark Buschle and Registered Dietitian Diana Griffin invited agriculture students into the kitchen to show them different ways to prepare the produce they grow. The team's goal is to hopefully “grow” the gardening program to include enough produce to be served in the school cafe. “We want to show kids that wellness is a lifestyle!" Stephanie Dorfman MS, RDN is virtually synonymous with CulinArt’s wellness strategy, having developed it from its infancy. She built CulinArt’s regional network of dietitians and developed their mission to bring engaging and educational wellness events to client locations. She works closely with the Culinary Development team to ideate topics for tablings, content, programming, and messaging, and contributes to recipe development. As CulinArt’s most prominent dietary professional, Stephanie plays an active role in sales proposals and presentations and is present at new account openings, putting a face to our wellness identity. She spearheaded “Connecting Through Food,” a digital cookbook debuting this month, as part of National Nutrition Month, featuring recipes for nutritious and well-balanced meals that can be prepared in account locations as well as the home. Stephanie is a certified intuitive eating counselor who shuns the idea of “bad foods” and believes the only reasons not to enjoy a food are an allergy to it, spoilage, or you simply don’t like the taste—a philosophy she has spread throughout CulinArt. Speaking of allergies, Stephanie created and leads CulinArt’s Allergy Training Bootcamp, an intensive training for chefs, managers, and front-line associates. Her partnership with onsite fitness teams and expertise on fueling the body for a workout led to increased class participation. Monique Mazaika, RDN works tirelessly to optimize how food allergies are managed in the K12 setting. “It's incredibly important to me that all students coming into our cafeterias feel safe to eat with us, and that their parents feel comfortable sending them to us because they know that we will take care of them. That starts with awareness. All onsite food service staff want to help students with food allergies but not everyone understands how. Each summer Ashleigh Starr, TouchPoint Oncology Dietitian, partners with a local farm to provide fresh produce to her patients. Through a Community Supported Agriculture (CSA) program, she shares weekly produces drops from local farmers with her patients, accompanied by recipes that teach patients how to prepare the items they received – all completely free.

Destin Faria MHS, RD, LD is very involved with her client, a global automotive manufacturer, and helping them achieve their wellness goals. One of the most engaging ways she reaches employees is through the Teaching Kitchen, which she hosts monthly. Chartwells Higher Ed's Brianna Archangeli, RDN is a superstar at making learning about nutrition fun! She hosts so many programs that the Central Michigan University students love, but one of the most exciting experiences she offers is the Teaching Kitchen. In collaboration with a chef, she hosts interactive cooking classes where students learn to prepare delicious and healthy meals. TouchPoint’s inpatient dietitian team at Ascension Seton Hays partnered with the outpatient cardiac and pulmonary rehab team to bridge the large gap in nutrition education after the department lost its outpatient dietitians. Each month the team provides nutrition education to this particularly vulnerable population. Each session is an hour-long, in-person education with supplemental virtual education. The effort is felt across the community with the rehab team seeing less readmissions and more success with their patients.
