Ingredients
- 1 1/3 cup vanilla Greek yogurt
- 2 cup quick oats
- 2 cup unsweetened coconut milk
- 1 Tbsp vanilla extract
- 3 Tbsp honey
- 1 Tbsp ground cinnamon
- 2 each banana mashed
- 1/4 cup chia seeds
- 1/2 cup semi-sweet chocolate chips
Garnishes:
- 1/3 cup semi-sweet chocolate chips
- 4 oz banana chips
- 2 1/4 tsp ground cinnamon

Instructions
- In a mixing bowl with a whisk combine vanilla yogurt, oatmeal, coconut milk, vanilla, honey, cinnamon, mashed banana, chia seeds, and chocolate.
- Place the overnight oatmeal mixture into an airtight container and cover. Refrigerate for at least 8 hours, but preferably overnight.
- Scoop 8 oz of overnight oatmeal into a bowl. Garnish the top of each oatmeal with 1 tsp. of chocolate chips, 1/2 oz. of dried banana chips, and 1/4tsp. ground cinnamon.
