Ingredients

  • 1 1/3 cup vanilla Greek yogurt
  • 2 cup quick oats
  • 2 cup unsweetened coconut milk
  • 1 Tbsp vanilla extract
  • 3 Tbsp honey
  • 1 Tbsp ground cinnamon
  • 2 each banana mashed
  • 1/4 cup chia seeds
  • 1/2 cup semi-sweet chocolate chips

Garnishes:

  • 1/3 cup semi-sweet chocolate chips
  • 4 oz banana chips
  • 2 1/4 tsp ground cinnamon

Instructions

  • In a mixing bowl with a whisk combine vanilla yogurt, oatmeal, coconut milk, vanilla, honey, cinnamon, mashed banana, chia seeds, and chocolate.
  • Place the overnight oatmeal mixture into an airtight container and cover. Refrigerate for at least 8 hours, but preferably overnight.
  • Scoop 8 oz of overnight oatmeal into a bowl.  Garnish the top of each oatmeal with 1 tsp. of chocolate chips, 1/2 oz. of dried banana chips, and 1/4tsp. ground cinnamon.
