1 1/3cupvanilla Greek yogurt
2cupquick oats
2cupunsweetened coconut milk
1Tbspvanilla extract
3Tbsphoney
1Tbspground cinnamon
2eachbananamashed
1/4cupchia seeds
1/2cupsemi-sweet chocolate chips

In a mixing bowl with a whisk combine vanilla yogurt, oatmeal, coconut milk, vanilla, honey, cinnamon, mashed banana, chia seeds, and chocolate.
Place the overnight oatmeal mixture into an airtight container and cover. Refrigerate for at least 8 hours, but preferably overnight.
Scoop 8 oz of overnight oatmeal into a bowl. Garnish the top of each oatmeal with 1 tsp. of chocolate chips, 1/2 oz. of dried banana chips, and 1/4tsp. ground cinnamon.
