Spring Veggie Arugula and Boursin Cheese Salad

Ingredients

  • 3 each Asparagus Stalks
  • 1 tsp canola oil
  • 1 pinch salt
  • 2 cups lettuce blend of choice
  • ¼ cup red cabbage, shredded
  • ¼ cup carrots, shredded
  • 1/8 cup fennel, shaved
  • 1 ea radish, thinly sliced
  • 1.5 oz boursin garlic herb cheese
  • 3 Tbsp Italian dressing

Instructions

  • Heat a grill or cast iron pan, season asparagus with salt and oil and grill for 2-3 minutes turning once or twice.
  • Allow to chill and cut into 1″ pieces.
  • Prepare lettuce, cabbage, carrots, fennel and radishes.
  • To assemble one salad: Toss together all ingredients with dressing and enjoy chilled.
