Ingredients

For the Chia Seed Pudding

  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/4 cup maple syrup
  • 1/2 cup chia seeds
  • 2 cup unsweetened coconut milk

For the Bowl

  • 3 cup chia seed pudding
  • 1/2 cup strawberries sliced
  • 1/2 cup kiwi sliced
  • 1/2 cup mandarin orange segments
  • 1/4 cup granola

Instructions

For the Chia Seed Pudding

  • Place all the ingredients in a large mixing bowl and whisk for 1–2 minutes until smooth. Transfer the mixture to a container, cover, and refrigerate for at least 4 hours or overnight to allow the pudding to set.

For the Bowl

  • Scoop ¾ cup of chia seed pudding into a bowl and spread it evenly to form a smooth base layer.
  • Randomly place 2 tablespoons of strawberries, kiwi, and mandarin oranges around the bowl on top of the chia seed pudding. Sprinkle the bowl with 1 tablespoon of granola.
