Hiddenfjord: Pioneers of Sustainable Fish Farming
Restaurant Associates is proud to have a trusted fish purveyor in Faroe Island-based Hiddenfjord. Beyond being a marvel in Faroese salmon farming led by the Gregersen brothers, Hiddenfjord has maintained its legacy of sustainability and innovation since 1887. Hiddenfjordis a salmon farm that has been recognized and certified for its sustainable practices by BAP and GLOBALG.A.P.—organizations focused on certifying safety, responsibility, and ethical practices in seafood production.
In 2021, Hiddenfjord managed to reduce their carbon dioxide (CO2) emissions by 8%, achieving a larger reduction than the Norwegian average that year. They show a strong commitment to the well-being of their fish, which they achieve by strategically moving fish pens, creating natural living conditions, keeping the pens less crowded, and using a unique and stress-free method for harvesting. They control the entire process—from maintaining a cold supply chain to quickly producing salmon—ensuring a steady supply of high-quality salmon with a longer shelf life. And it’s delicious, too!

Mediterranean Salmon En Papillote
Preheat your oven to 400°F. Cut parchment paper into large heart shapes, one for each fillet. Place a salmon fillet in the center, drizzling with olive oil and seasoning with sea salt and black pepper. Add cherry tomatoes, Kalamata olives, artichoke hearts, and green beans. Sprinkle fresh basil leaves and thyme, finishing with a squeeze of lemon and a teaspoon of butter. Fold and seal the parchment paper into packets, crimping the edges tightly. Place on a sheet pan and bake for 15-20 minutes until the salmon is moist and infused with flavor. The dramatic reveal at the table is as delightful as the dish itself.
Poached Oil Salmon
In a large saucepan, combine olive oil, lemon slices, garlic cloves, and a medley of fresh herbs such as dill, thyme, and parsley. Bring the mixture to a gentle simmer. Nestle salmon fillets into the aromatic oil bath, ensuring they are fully submerged. Poach the salmon over low heat for approximately 10-15 minutes until it is just cooked through. The result is a succulent and flavorful oil-poached salmon that melts in your mouth. Combine with rice and vegetables for a complete and tasty meal.
