Ingredients
For the Sesame Ginger Dressing
- 1-1/2 tsp unseasoned rice wine vinegar
- 1/8 tsp sesame oil
- 1 Tbsp fresh cilantro chopped
- 1/8 tsp ground ginger
- 1/4 tsp fresh garlic chopped
- 1 Tbsp honey
- 2 Tbsp low sodium soy sauce
- 3 Tbsp orange juice
For the Salad
- 8 oz Lo Mein noodles cooked
- 1 cup bok choy thinly sliced
- 1 cup snow peas thinly sliced
- 1 cup red bell peppers thinly sliced
- 1 cup shredded carrots
- 1/2 cup green onion thinly sliced
- 1/4 tsp fresh cilantro chopped
- 1 Tbsp fresh lime juice
- 2 tsp sesame seeds
- 1/4 cup red onion thinly sliced

Instructions
For the Sesame Ginger Dressing
- Combine all ingredients into a blender. Blend well until all ingredients are combined. Refrigerate until ready to assemble the salad.
To assemble each Salad
- In an entree bowl, add 1 oz. of sesame ginger dressing, 2 oz. of lo mein noodles, 1/4 cup of Bok choy, 1/4 cup of snow peas, 1/4 cup of red bell peppers, 1/4 cup of carrots, 2 Tbsp. of green onions, 1 Tbsp. of cilantro, 1 tsp. of lime juice, 1/2 tsp. sesame seeds and 1 Tbsp. red onion, then toss to combine.
- Arrange into salad bowls and serve with 2 oz. sesame ginger dressing.
