Sesame Ginger Noodle Salad

Sesame Ginger Noodle Salad

Ingredients

For the Sesame Ginger Dressing

  • 1-1/2 tsp unseasoned rice wine vinegar
  • 1/8 tsp sesame oil
  • 1 Tbsp fresh cilantro chopped
  • 1/8 tsp ground ginger
  • 1/4 tsp fresh garlic chopped
  • 1 Tbsp honey
  • 2 Tbsp low sodium soy sauce
  • 3 Tbsp orange juice

For the Salad

  • 8 oz Lo Mein noodles cooked
  • 1 cup bok choy thinly sliced
  • 1 cup snow peas thinly sliced
  • 1 cup red bell peppers thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup green onion thinly sliced
  • 1/4 tsp fresh cilantro chopped
  • 1 Tbsp fresh lime juice
  • 2 tsp sesame seeds
  • 1/4 cup red onion thinly sliced

Instructions

For the Sesame Ginger Dressing

  • Combine all ingredients into a blender. Blend well until all ingredients are combined. Refrigerate until ready to assemble the salad.

To assemble each Salad

  • In an entree bowl, add 1 oz. of sesame ginger dressing, 2 oz. of lo mein noodles, 1/4 cup of Bok choy, 1/4 cup of snow peas, 1/4 cup of red bell peppers, 1/4 cup of carrots, 2 Tbsp. of green onions, 1 Tbsp. of cilantro, 1 tsp. of lime juice, 1/2 tsp. sesame seeds and 1 Tbsp. red onion, then toss to combine.
  • Arrange into salad bowls and serve with 2 oz. sesame ginger dressing.
