Ingredients
For the Sesame Ginger Dressing
1-1/2tspunseasoned rice wine vinegar
1/8tspsesame oil
1Tbspfresh cilantrochopped
1/8tspground ginger
1/4tspfresh garlicchopped
1Tbsphoney
2Tbsplow sodium soy sauce
3Tbsporange juice
For the Salad
8ozLo Mein noodlescooked
1cupbok choythinly sliced
1cupsnow peasthinly sliced
1cupred bell peppersthinly sliced
1 cupshredded carrots
1/2cupgreen onionthinly sliced
1/4 tspfresh cilantrochopped
1Tbspfresh lime juice
2tspsesame seeds
1/4cupred onionthinly sliced

Instructions
For the Sesame Ginger Dressing
Combine all ingredients into a blender. Blend well until all ingredients are combined. Refrigerate until ready to assemble the salad.
To assemble each Salad
In an entree bowl, add 1 oz. of sesame ginger dressing, 2 oz. of lo mein noodles, 1/4 cup of Bok choy, 1/4 cup of snow peas, 1/4 cup of red bell peppers, 1/4 cup of carrots, 2 Tbsp. of green onions, 1 Tbsp. of cilantro, 1 tsp. of lime juice, 1/2 tsp. sesame seeds and 1 Tbsp. red onion, then toss to combine.
Arrange into salad bowls and serve with 2 oz. sesame ginger dressing.
