Pomegranate Orange Chia Pudding Parfait with Almonds

Ingredients

Chia Pudding Base

  • 1/2 cup chia seeds
  • 1 cup vanilla Greek yogurt
  • 1 cup whole milk

Pomegranate Orange Chia Pudding Parfait with Almonds

  • 2 cups Chia pudding base
  • 8 oz orange sections fresh, peeled
  • 2 oz pomegranate seeds
  • 2 cups vanilla Greek yogurt
  • 1/8 oz sliced almonds toasted
  • 1/8 oz fresh mint sprig

Instructions

Chia Pudding Base

  • Add yogurt, milk and chia seeds in a mixing bowl and stir to combine.
  • Cover and refrigerate 4-6 hours, serve cold.

Pomegranate Orange Chia Pudding Parfait with Almonds

  • Place 1/4 cup yogurt in the bottom of a 9 oz cup.
  • Top with 3-4 orange segments and 1 Tbsp pomegranate seeds.
  • Add 1/4 cup chia pudding.
  • Repeat steps 1-3 (yogurt, fruit, chia pudding).
  • Garnish with 2 orange segments, 1 tsp pomegranate seeds, 1 tsp toasted Almonds and a sprig of mint.
