Ingredients
- 3 small peaches (or 1 large) diced
- 5 Tbsp shredded coconut toasted
- 1 cup Vanilla Coconut Yogurt
- 1 cup coconut milk unsweetened
- ½ cup chia seeds

Instructions
- Prepare coconut chia pudding by adding yogurt, coconut milk and chia seeds in a mixing bowl.
- Whisk to combine.
- Cover and refrigerate for 4-6 hours.
Assembly
- Stir pudding and place ½ cup in a bowl. Top with 1/4 cup diced peaches. Add 1 Tbsp toasted coconut.
