Oatmeal Almond Cranberry Bars

Ingredients

Base

  • 1 cup oatmeal Quick
  • 1/2 cup almonds chopped
  • 2 Tbsp Honey
  • 1 1/2 tsp Coconut Oil
  • 1/8 tsp kosher salt
  • 3/4 tsp ground cinnamon
  • 1 cup fresh banana diced
  • 3/4 tsp vanilla extract
  • 1 1/2 Tbsp Chia Seeds

Topping

  • 2 Tbsp oatmeal Quick
  • 2 Tbsp almonds sliced, toasted
  • 1 Tbsp pumpkin seeds
  • 2 1/3 Tbsp dried cranberries
  • 1 Tbsp shredded coconut unsweetened
  • 1 1/2 tsp granulated sugar

Instructions

  • Prepare Base – In a food processor, add the larger amount of oats, almonds, honey, coconut oil, salt, cinnamon, bananas, vanilla extract and chia seeds. Process until fully combined and paste-like. Pour the mixture onto a parchment lined pan and flatten to a 1/2 inch thickness. Cook in a 350° oven for 10 minutes. Prepare the topping while the base is cooking.
  • Prepare Topping – In a mixing bowl combine smaller amount of oats, almonds, pumpkin seeds, cranberries, coconut and sugar.
  • Remove the base from the oven and evenly spread the topping on it before it cools. Use a spatula to push the topping into the base to make it stick better. Cut in to even pieces to create bars.
