Mediterranean Haddock

This vibrant, Mediterranean-inspired dish brings together delicate flavors and bold accents in perfect harmony.

Ingredients

  • 1 lb haddock filets thawed (any white fish will work)
  • ¼ c lemon vinaigrette
  • 1 c couscous dry
  • 1 c vegetable stock
  • ¼ tsp salt & pepper
  • ¼ c green olives sliced
  • ¼ c roasted red peppers canned, strips
  • ¼ c red onion or shallots thinly sliced
  • 2 ea oranges peeled, cut into sections

Instructions

  • Slice olives, peppers, onions/shallots, and oranges and toss together for topping and hold cold.
  • Heat the vegetable stock in pot and bring to boil, add couscous, mix to combine, remove from heat and cover for 5-10 minutes. Remove lid, fluff and warm.
  • Season fish with salt and pepper and sear in pan about 3 minutes per side.
  • To assemble one portion: Place 1/2 cup couscous, 1 piece of cooked haddock, olive tomato salsa and drizzle with and 1 tbsp lemon vinaigrette served over the fish.
