Granola with Seeds and Banana Chips

Homemade Seed Oat Banana Cranberry Granola

Ingredients

  • 1 Tbsp light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp kosher salt
  • 1/4 cup unsweetened applesauce
  • 2 Tbsp agave nectar
  • 1 1/2 Tbsp maple syrup
  • 1 tsp canola oil
  • 8 1/2 cups old fashioned oats
  • 1/3 cup pumpkin seeds
  • 1/3 cup roasted, unsalted sunflower seeds
  • cooking spray
  • 1/3 cup banana chips
  • 1/4 cup dried cranberries

Instructions

  • In a bowl, combine brown sugar, cinnamon, ginger, salt, applesauce, agave, maple syrup and canola oil.
  • Add oats, pumpkin seeds and sunflower seeds. Mix until evenly coated with wet ingredients. Prepare parchment lined sheet tray with pan spray. Spread oat mixture flat in a thin layer on prepared pans.
  • Bake in preheated 300 F oven. Bake until golden brown (~45 minutes; stirring well every 15 minutes). Allow granola to cool. Add the banana chips and cranberries, combine well.
