Fighting climate change is complex and requires systemic change. However, there are plenty of things we can do in our day-to-day lives to reduce our carbon footprints. One of the best ways we can impact the environment is through food.
There is a beautiful, synergistic relationship between our health and that of the earth; often what is better for our health is better for the planet. Here are a few of Restaurant Associates’ favorite ways to reduce our environmental impact.
Eat less beef. You’ve hopefully heard this before, but it bears repeating. You don’t have to omit beef from your diet altogether, but reducing the amount you eat can make a difference. Methane emissions from cows are one of the biggest contributors to greenhouse gasses that trap heat within the atmosphere and worsen climate change. It is estimated that livestock alone accounts for 14.5% of the world’s greenhouse gasses – that’s roughly the same amount as the emissions from all cars, trucks, airplanes and ships combined. The amount of grazing land (with fewer trees), water, and fuel it takes to produce beef is astounding. Additionally, health-wise, human research trials have shown a strong correlation between increased beef consumption and increased risk for cardiovascular disease and colon cancer risk. In place of beef, opt for more sustainable proteins like poultry or sustainable seafood options, or enjoy a “blended burger” with lots of veggies.
Eat more beans. Beans have it all – an abundance of vitamins, minerals, and antioxidants; a very low carbon footprint; tons of soluble fiber and plant protein! Did you know 1 cup of chickpeas provides 14 grams of protein? The good news is that there are many varietals of legumes, with many recipes readily available online that have been inspired by different cuisines around the world that use beans as a staple.
Buy from companies that support regenerative farming. In short, regenerative farming consists of crop rotation to sustain and restore soil. This farming practice yields nutrient dense soil and reduces carbon emissions, while also providing you with nutritious, delicious produce.
Support local farmers. Why buy from your local farmer’s market? Food that is produced locally means less travel time, which means a lower carbon footprint. Not only are you supporting someone’s small business, but the food will also taste fresher and retain more vitamins and minerals.
These are just a few of the many ways we can eat for the earth, while also benefitting our own health. It can be overwhelming to make sweeping changes to your eating habits all at once, so try adopting these recommendations one at a time to see what works best for you.
