Ingredients

  • 2 Tbsp fresh cilantro minced
  • 2 Tbsp fresh parsley
  • 2 Tbsp garlic clove minced
  • 1 1/4 tsp coriander seed if you don't have whole spice, use ground and reduce amount by half
  • 1 1/4 tsp cumin seed if you don't have whole spice, use ground and reduce amount by half
  • 2 1/2 tsp ground paprika
  • 1 1/4 tsp kosher salt
  • 1 1/4 tsp white peppercorns if you don't have whole spice, use ground and reduce amount by half. Or use black peppercorns whole or freshly cracked.
  • 1/4 cup fresh lemon juice
  • 1/2 cup extra virgin olive oil

Instructions

  • Into a food processor add: cilantro, parsley, garlic, coriander seeds, cumin seeds, paprika, salt and white pepper. Blend until a smooth paste. Add lemon juice and olive oil.
    If you don't have a food processor, you can chop herbs and garlic finely with a chef's knife and grind spice with mortar and pestle or back of spoon with pressure.
