Cajun Chicken Pasta

Ingredients

  • 2 Tbsp canola oil
  • 1 Tbsp fresh garlic chopped
  • 1/4 cup red onion small diced
  • 1/4 cup green bell pepper small diced
  • 1/4 cup red bell pepper small diced
  • 1/4 cup white mushrooms sliced
  • 1/4 cup white wine
  • 2 tsp Cajun seasoning
  • 1/4 cup Alfredo sauce
  • 2 oz kielbasa sausage sliced
  • 1-1/2 Tbsp fresh parsley chopped
  • 1 tsp fresh lemon juice
  • 1 ea grilled chicken breast sliced
  • 1 cup rotini pasta cooked

Instructions

  • In a sauté pan, heat oil over medium heat. Add the garlic, onion, and bell pepper and sauté for 3-5 minutes until fully cooked.
  • Next, add the mushrooms and cook for 2 minutes. Add the wine and allow the broth to reduce by half. Fold in the Cajun seasoning, Alfredo sauce, sausage, 1 Tbsp of parsley, and lemon, and bring to a simmer.
  • Stir in the chicken breast and rotini pasta. Simmer for 3-5 minutes and stir occasionally.

Plating

  • In a bowl, ladle 8 oz. of Cajun pasta per serving and garnish with 1/4 tsp of chopped parsley.
