Ingredients
- 2 Tbsp canola oil
- 1 Tbsp fresh garlic chopped
- 1/4 cup red onion small diced
- 1/4 cup green bell pepper small diced
- 1/4 cup red bell pepper small diced
- 1/4 cup white mushrooms sliced
- 1/4 cup white wine
- 2 tsp Cajun seasoning
- 1/4 cup Alfredo sauce
- 2 oz kielbasa sausage sliced
- 1-1/2 Tbsp fresh parsley chopped
- 1 tsp fresh lemon juice
- 1 ea grilled chicken breast sliced
- 1 cup rotini pasta cooked

Instructions
- In a sauté pan, heat oil over medium heat. Add the garlic, onion, and bell pepper and sauté for 3-5 minutes until fully cooked.
- Next, add the mushrooms and cook for 2 minutes. Add the wine and allow the broth to reduce by half. Fold in the Cajun seasoning, Alfredo sauce, sausage, 1 Tbsp of parsley, and lemon, and bring to a simmer.
- Stir in the chicken breast and rotini pasta. Simmer for 3-5 minutes and stir occasionally.
Plating
- In a bowl, ladle 8 oz. of Cajun pasta per serving and garnish with 1/4 tsp of chopped parsley.
