Ingredients
- 1.5 cup cheese grits
- ¼ cup pico de gallo
- 2 eggs
- 2 tsp oil
- 1/4 cup diced red bell pepper
- 1/4 cup diced green bell pepper
- 1/3 cup diced yellow onion
- 4 oz beyond steak
- 2 cups arugula

Instructions
- Prepare cheese grits and pico de gallo.
- Heat oil, cook onions and peppers for 2-3 minute. Add beyond steak and cook until heated through. Hold warm.
- Cook 1 egg to order with pan spray.
- Toss arugula with pico.
- To assemble one serving place ¾ cup of grits in bowl, top with ¾ cup steak and onions, top with fried egg, and 1 cup or arugula tossed with pico.
