Instructions
For the Spicy Peanut Dressing
- In a small bowl, whisk together peanut butter, sambal, rice vinegar and soy sauce. While whisking, slowly drizzle in oil until all oil is incorporated. Stir in sesame seeds. Set dressing aside until ready to use.
- In large pot of boiling water, cook noodles according to package instructions. When noodles are done, use a slotted spoon to remove noodles from boiling water and set aside until ready to use. Using the same cooking water, cook the edamame until tender, about 5 minutes. Rinse under cold water and drain. Set aside until ready to build the salads.
To build the salad
- Divide Spicy Peanut Dressing equally among 4 pint-sized mason jars. Divide soba noodles over dressing. Layer red pepper, edamame, carrots, greens and end with rice noodles. Top with lids and refrigerate up to 2 days. To serve, pour onto plate or bowl, stir and enjoy. Or shake the jar and stir with chop sticks to enjoy.
