Ingredients
- 3/4 cup old fashioned oats
- 2 tsp salt free garlic herb seasoning
- 3 Tbsp extra virgin olive oil
- 3 tsp garlic clove peeled, fresh, minced
- 8 ounces whole wheat spaghetti
- 1 can anchovy fillets
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
- 2 tbsp grated parmesan cheese
- 2 cup tomatoes diced

Instructions
Herbed Oat Crumbs
- Place oats in a food processor and grind until floury. Heat 2 teaspoons olive oil in a saute pan and place ground oats and 1 teaspoon minced garlic. Stir and toast until fragrant and light golden brown. Add in garlic herb seasoning. Let cool and keep aside.
Anchovy Pasta
- Cook pasta in boiling water until al dente and drain (reserve cooking water). Chill and set aside.
- Heat remaining oil in a saute pan and add the anchovy fillets and remaining minced garlic cloves. Mash the anchovies and toast the garlic, without burning. Add the cooked pasta, diced tomatoes and red chili flakes. Toss and cook to heat through (add some of the reserved cooking liquid if too dry).
- Season with salt, freshly ground black peper. Garnish with grated parmesan cheese and Herb and Garlic Oat Crumbs.
