Pumpkin Energy Bites

Ingredients

  • 1/4 cup semi sweet chocolate chips
  • 1/2 cup dried apricots
  • 2.25 oz pitted dates
  • 1/2 cup golden raisins
  • 1 Tbsp whole flaxseeds
  • 1/4 cup roasted, unsalted sunflower seeds
  • 1 cup Rice Krispies cereal
  • 1/4 cup canned pumpkin
  • 1/4 cup honey
  • 1/4 tsp ground nutmeg
  • 1/2 cup creamy peanut butter
  • 1 cup quick oats
  • 1/4 cup quick oats

Instructions

  • Chop apricots and dates and place in large mixing bowl.
  • Add remaining ingredients, except 1/4 cup of oats. Mix well to combine the ingredients.
  • Form mixture into tight 1 oz balls. You should get about 22 total. Spread out the 1/4 cup of remaining oats on a cutting board and roll the balls in the oats so they stick to the outside. Plate and serve.
