Ingredients
Roasted garlic
- 10 each garlic clove whole
- 1/2 tsp oil
- 1/4 tsp ground black pepper
Tomato Basil Broth
- 4 cup vegetable broth
- 2 Tbsp roasted garlic
- 1 cup tomatoes diced
- 1/4 cup fresh basil chopped
- 1 tsp fresh lime juice

Instructions
For the Roasted Garlic
- Preheat the oven to 375 degrees F. In a medium mixing bowl, toss the garlic cloves with the oil and pepper to coat. Then, place the garlic into a 2 x 2 piece of aluminum foil; seal the edges to form a loose pouch. Place on a baking sheet and in the 375°F oven. Bake for approximately 20-25 minutes or until the garlic is nicely caramelized. Remove from the oven and allow it to cool slightly. You can mash the garlic into a smooth puree.
For the Tomato Basil Broth
- Pour the vegetable broth into a stock pot and add the tomatoes, roasted garlic, and basil. Bring the broth to a gentle simmer (not a boil) and let it cook uncovered for 30 minutes to allow the flavors to infuse. Once infused, strain out the solids and add the lime juice to finish.
