Sushi Style Chopped Salad

Our sushi style chopped salad is a delightful twist on traditional sushi. The vibrant and colorful ensemble is the fusion of sushi ingredients in a refreshing form.

Ingredients

  • 2 cups Iceberg lettuce chopped
  • 2 cups Romaine lettuce chopped
  • 1/4 cup carrots matchstick
  • 1/4 cup purple cabbage chopped
  • ¼ cup short grain white rice calrose, dry
  • 4 tbsp green onion sliced thin
  • ½ cup edamame shelled, thawed
  • ½ cup cucumbers diced
  • ½ ea avocados diced
  • ¼ sheet nori diced or shredded into small pieces
  • 2 tsp sesame seeds toasted

Instructions

  • Cook rice according to package directions. You should have about ½ cup cooked. Chill for assembly.
  • Prepare all ingredients according to cut size.
  • Place all ingredients in a bowl and toss with dressing until well mixed.
  • Divide into individual servings and enjoy!
  • Pair with your favorite dressing, we recommend a sesame ginger vinaigrette.

Top with your favorite protein! If you prefer extra crunch top with sliced almonds.
