Ingredients
- 4 cup chicken broth
- 1 cup carrots diced
- 1 Tbsp lemongrass minced
- 1 Tbsp fresh ginger minced
- 1 Tbsp turmeric
- 1 Tbsp lemon juice

Instructions
- Pour the chicken broth into a stock pot and add the carrots, lemongrass, ginger, and turmeric. Bring the broth to a gentle simmer (not a boil) and let it cook uncovered for 30 minutes to allow the flavors to infuse. Once infused, strain out the solids and add the lemon juice to finish.
