Using an electric mixer, slowly add the wet ingredients, excluding coconut oil, to the dry ingredients until fully incorporated. Slowly add coconut oil to mixture.Using a 1oz ice cream scoop, portion out mixture. Roll on coconut flakes. Refrigerate until ready to eat.
